To make Dalgona coffee, whip instant coffee, sugar and water to make an emulsion. Pour cold milk into glasses and spoon the whipped coffee mixture on top.

In a large mixing bowl (see notes after the recipe), whip the coffee, sugar and milk until thick. The consistency you're looking for is that of an emulsion. Like mayonnaise. Or egg whites beaten to stiff peaks.
Divide the milk equally between glasses (well, you can use opaque mugs unless you're aiming for aesthetics).
Spoon the whipped coffee on top of the milk.
Sprinkle chopped dark chocolate on top of the coffee and serve.
Notes on serving. You will want to use a teaspoon to stir the frothy coffee into the milk.
When whipping the coffee, sugar and water together, use a large mixing bowl. As the mixture thickens, it will double in volume so you need a large bowl that can contain everything inside to avoid splashes and splatters on your kitchen counter.Dalgona coffee may be served with hot or cold milk. It all depends on your preference.
