Spicy Cucumber and Mint Raita

Ingredients

  • 1 large cucumber peeled and seeds scraped off
  • 1/2 cup plain yogurt
  • 8 large mint leaves
  • 1 small handful cilantro
  • 1 pinch cumin
  • 1 to 2 pinches chili flakes
  • 1/2 teaspoon grated ginger
  • juice of 1/4 lemon
  • salt to taste

Instructions

  1. Grate the cucumber (I used a micro-plane grater).
  2. Finely slice the mint leaves.
  3. Chop the cilantro.
  4. Place all the ingredients in a bowl and stir.
  5. Serve chilled with toasted flat bread.
