Asian-style noodles with spicy peanut sauce

Ingredients

  • 100 grams noodles
  • 3 tablespoons cooking oil
  • 3 chicken thigh fillets cut into thin strips
  • 1 carrot julienned (i.e., cut into matchsticks)
  • 12 green beans (ends snapped off and sides stringed), sliced thinly on the bias
  • 1 onion thinly sliced
  • 1 tablespoon garlic minced
  • patis (fish sauce), to taste
  • black pepper to taste

For the spicy peanut sauce:

  • 4 tablespoons smooth peanut butter (I used sweetened)
  • 2 tablespoons hoisin sauce
  • 1 to 2 tablespoons sambal oelek depending on how spicy you want the sauce
  • 1/4 teaspoon garlic grated
  • 1/4 teaspoon ginger grated
  • juice of 2 to 3 kalamansi (or juice of about a quarter of a lemon)
  • patis (fish sauce), to taste
  • a drizzle of sesame seed oil

To garnish:

  • crisp fried onion slices (bought or homemade)
  • garlic bits toasted
  • sesame seeds toasted

Instructions

  • Cook the noodles according to package directions.
  • While the noodles cook, make the spicy peanut sauce. Place the peanut butter in a small bowl and pour in 3 to 4 tbsps. of boiling water. Mix to form a smooth paste. Add the rest of the ingredients and stir to blend.
  • Heat the cooking oil. Add the chicken and stir fry just until the meat changes color. Pour in a splash of fish sauce. Season with pepper. Continue cooking until the liquid has been absorbed by the meat and the meat pieces start to brown along the edges.

  • Add the garlic and onion. Stir fry for half a minute.
  • Add the green beans and carrot. Season with more fish sauce and pepper. Stir fry for one to two minutes.

  • Toss together the noodles and the spicy peanut sauce.
  • Divide the noodles among individual plates.
  • Top the noodles with the stir fried chicken and vegetables.
  • Garnish with sesame seeds, crisp onion slices and toasted garlic bits.
