Sam's Farmhouse Sandwich

Ingredients

  • 2 to 3 rashers belly bacon fried until crisp
  • chicken fried steak
  • cheese omelet
  • 1 single serve baguette
  • mayonnaise
  • alfalfa sprouts
  • shredded lettuce
  • 2 to 3 slices pastrami
  • mixed seeds (flax, chia and hemp seeds), to garnish

Instructions

  • Start by cooking the bacon in an oil-free pan. You'll need the rendered fat to cook the chicken and omelet in. Set aside the cooked bacon and keep warm.
  • Reheat the rendered fat. If there's too little, add oil. You'll need at least an inch of oil to fry the chicken in.
  • Decide how you want to season and coat the chicken (the link to three options are provided in the ingredients list), prep the chicken fillet then fry it.
  • Pour off the oil in the pan leaving only a tablespoonful. Add a tablespoonful of butter and heat together. Cook the cheese omelet.
  • Split the baguette into halves.
  • Cover the bottom half with a generous amount of mayonnaise.
  • Start piling on the fillings. There is no particular order but the order I followed is mayo, alfalfa sprouts, chicken, lettuce, pastrami, bacon, cheese omelet and seeds.
  • Cover the filling with the upper half of the bread.
  • Optionally cut the farmhouse sandwich into two to three portions before serving.
