A seasoning made by fermenting soybeans with a mold, salt and other ingredients. Traditionally used in Japanese and Korean cooking, the color and flavor of miso paste are determined by temperature, the length of fermentation, the amount of salt added, the ingredients added during fermentation and the material of the vessel where fermentation takes place.
