Sweets

Before colonization and Westernization, sweets at the end of a meal were not de rigueur. They were snacks, treats and, on special occasions, gifts. Enjoy these sweet morsels as dessert or just to indulge.

Turon is a sweet spring roll with ripe banana filling

It’s like biko but better. Cook the glutinous rice in coconut milk. Spread in a greased baking dish, top with salted caramel, sprinkle with desiccated coconut and bake. It’s so good.

Bibingkang Malagkit (Sticky Rice Cake)

Palitaw is a Filipino rice cake cooked in boiling water, dredged in freshly grated coconut and sprinkled with sugar mixed with toasted sesame seeds.

Imagine leche flan (steamed crème caramel) or crème brûlée without the hard topping. Imagine coconut flakes stirred into the custard. Now, imagine that delightful mixture enfolded by a buttery crust. That’s what this coconut custard pie is in a nutshell.
