After the last exam on the last day of the bar exams (ooh that’s alliteration) decades ago, a lawyer friend treated me to dinner. He said I could bring along my friends. It was his way of saying thank you because I helped him collect a bad loan. He brought us to the East Dragon Seafood Restaurant (it has a different name now) at the Century Park Sheraton Hotel and treated us to a sumptuous lauriat. As authentic Chinese lauriat goes, rice was not served. It bothered my brother so much but I didn’t care. Anyway, it was the first time I had hot chicken salad. It was a dish I would never forget and, after that dinner, would always look for in Chinese restaurants.

What exactly is hot chicken salad? Newly-fried golden and crisp chicken cubes tossed with drained fruit cocktail dressed with a mixture of mayonnaise, cream and milk. It is absolutely delicious.

I’ve never had a chance to make hot chicken salad myself until many years later. I also learned that the chicken can be substituted with shrimps. One day, I’ll do the shrimp version. For now, here is the warm chicken salad recipe.

Ingredients
  • 1 can fruit cocktail
  • 1/3 cup mayonnaise
  • 3 tablespoons cream
  • 3 tablespoons full-fat milk
  • 2 chicken breast fillets
  • 1 tablespoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup cornstarch
  • 1/4 cup all-purpose flour
  • 2 cups cooking oil
Instructions
  1. Drain the fruit cocktail for at least 20 minutes then transfer to a mixing bowl.
  2. Whisk together the mayonnaise, cream and milk. Pour over the drained fruit cocktail and toss. Set aside.
  3. Pat the chicken fillets dry with paper towels. Cut the meat into one-inch cubes. Place in a bowl. Add the salt, pepper, garlic powder and onion powder. Mix well.
  4. Stir together the cornstarch and flour. Add to the chicken and toss to coat each piece well.
  5. Heat the cooking oil in a wok or frying pan. Fry the chicken cubes (in batches if your wok or frying pan is on the small side) until golden and crisp, about three to four minutes. Scoop out and drain well.
  6. Toss the hot chicken with the prepared fruit cocktail.
  7. Serve the hot chicken salad at once.
