If you like hash browns but you’re already too bored with the usual way that hash browns are served, try this — hash brown patty smothered with tomato sauce, topped with generous slices of cheese then broiled just until the cheeses melt. It’s a snack that’s neither too light nor too heavy. It’s also a delightful breakfast that will make you push away those boxes of cereals.

You only need three ingredients — hash browns, tomato sauce and cheese. The hash brown patty I used was bought in the grocery. The tomato sauce is homemade (tip: if making tomato sauce with not-too-red tomatoes, add paprika). The cheeses — mozzarella and sharp cheddar.

If making tomato sauce is beyond your comfort zone, just mix together finely sliced onion, a pinch of oregano, tomato paste and olive oil. Don’t forget to season with salt and pepper, and a bit of sugar for balance.

If you prefer cheese other than mozzarella and sharp cheddar, go with your preference.

Now, to make this delicious snack (or breakfast), start by cooking the hash brown patty. Fry it, bake it, grill it — that’s up to you.

Arrange the cooked hash brown patty on an oven-proof plate.

Slather tomato sauce over the hash brown patty then top with thin slices of cheese.

Pop the hash brown into a preheated 400F oven (a broiler actually works better) and leave it there just long enough for the tomato sauce to get bubbly and for the cheese or cheeses to melt.

You may optionally want to sprinkle your hash brown a la Parmigiana with some chopped parsley and drizzle a little extra virgin olive oil before serving.
