Not all breads are made with yeast. Some are made with baking soda or baking powder while some, like flatbreads, contain no leavening agents at all.
These loaves of corn bread are made with the same recipe as the 3-cheese mini corn muffins except for the addition of chopped smoked ham. The amount of ingredients in the recipe plus about half a cup of chopped ham will yield two mini loaves the same size as small fruit cakes.
To make these corn bread loaves with ham and cheese, start by preheating the oven to 350F and lining two mini-loaf pans with baking paper.
Make the dough by following the recipe for the 3-cheese mini corn muffins.
BUT. When you add the cheese cubes and corn, add 1/2 cup of chopped ham at the same time then fold everything together gently.
Divide the dough between the two pans. Tap the pans on the counter to make sure there are no hidden air pockets. Bake at 350F for about 40 minutes.
Cool the baked corn bread in the pans for about 15 minutes then move to a rack and cool completely. Cut into half-inch slices and serve. Best with coffee.
