Creamy, meaty, tangy, sweet, spicy. The best way to enjoy the chicken guacamole filling is to use flat bread. Like pita. Or you can flatten slices of loaf bread. It’s something I realized from hindsight. I used pan de sal and the volume of the bread simply overpowered the delicate flavors of the guacamole. Still, the idea of stirring chopped chicken into guacamole is a good one — something I picked up from an episode of Diners, Drive-ins and Dives — and I do intend to make chicken guacamole sandwiches again but using the right flat bread even if I have to make the bread myself.

- This is such a short recipe, really. You just mix together the guacamole and the chicken then you use it as a sandwich filling. Done.
Quick notes
In lieu of sandwiches, you can use the chicken guacamole filling as a topping for canapés.
Slice your bread, cut into small pieces, toast then top with the filling.
