Chicken guacamole sandwich Chicken guacamole sandwich

Creamy, meaty, tangy, sweet, spicy. The best way to enjoy the chicken guacamole filling is to use flat bread. Like pita. Or you can flatten slices of loaf bread. It’s something I realized from hindsight. I used pan de sal and the volume of the bread simply overpowered the delicate flavors of the guacamole. Still, the idea of stirring chopped chicken into guacamole is a good one — something I picked up from an episode of Diners, Drive-ins and Dives — and I do intend to make chicken guacamole sandwiches again but using the right flat bread even if I have to make the bread myself.

  • 2 c. of guacamole (recipes here and here)
  • 2 c. of chopped well-seasoned cooked chicken (grilled chicken is best)
  • toasted bread

  1. This is such a short recipe, really. You just mix together the guacamole and the chicken then you use it as a sandwich filling. Done.
