Should she lose out on the texture? Nah, she doesn’t have to. There’s always tofu skins that can be fried to a crisp, crumbled then sprinkled on top of a pile of raw veggies.

Substitute butter for the olive oil or use a combination of butter and olive oil. Add salt to the seasonings too. Finally, don’t scrimp on the herbs because they give so much depth of flavor.
