Avocado and pesto rice

avocado-rice

Always on the lookout for exciting vegetarian recipes for Sam, I came upon one called green goddess rice by Claire Robinson. Cooked rice is tossed with a paste made with avocado, basil, lemon juice and extra virgin olive oil. That's practically avocado and pesto. I already had pesto in the fridge so I asked Speedy to buy one ripe avocado so we could test the recipe before … [Read more...]

Avocado and pineapple salad

Last week, I asked Speedy to buy avocado so I could make guacamole for Sam to satisfy a week-long craving. He came home with half a dozen avocados, very pleased that he got them cheap. They were perfectly ripe, I just knew that the guacamole would turn out beautifully and that should make vegetarian Sam's waiting worth it.But six avocados to make guacamole? That's a … [Read more...]

Sinigang, a sour soup with meat or seafood and vegetables, has always been a favorite with my daughters. When they were toddlers, they were especially fond of sinigang na bangus. By the time they were in grade school, Sam preferred chicken sinigang while Alex favored pork sinigang. But whether the sinigang was cooked with meat or seafood, they had a special way of dividing … [Read more...]

Sam had been bugging me to bake dessert but, as much as I want to humor her, I'd rather not in this heat. I've baked a batch of granola bars for her a few days ago, I will again probably tomorrow or later today, but a cake or cupcakes or cookies? Oh, no, no, no, no. Not until the terrible heat and humidity let up for at least a day. She's still asleep as I write this, … [Read more...]

Pasta with avocado sauce

pasta-avocado-sauce

The best way to describe the sauce is a no-cook creamy pesto. The creaminess is courtesy of the avocado which also imparts a slight sweetness. Overall, the sauce is a little bit tart, garlicky and full of the wonderful flavors of fresh sweet basil. The grated cheese topping is optional. Omit it and this pasta with avocado sauce becomes totally vegan. … [Read more...]

Mango and avocado salsa

Our mint and basil are thriving but our lime tree has gone on vacation once more and it'll probably be several months before we see fruits again. The juice of the last three limes and a handful of freshly picked mint leaves went into this fresh salsa that is creamy, tangy, zesty, sweet and spicy all at the same time. It's great as a dip, as a garnish for grilled or fried … [Read more...]

Zucchini and tomato “spaghetti”

zucchini-tomato

I saw a zucchini and tomato "spaghetti" salad recipe that looks similar to the dish in the photo. I wasn't sure though if Sam would eat raw zucchini so I decided to create a cooked version of zucchini and tomato "spaghetti". The peg? Pasta aglio e olio. But there is no pasta in this dish. Instead, the zucchini is shredded into long threads that look like noodles. This … [Read more...]

Vegan spaghetti with chunky tomato sauce

It's Sam's birthday and she asked for spaghetti. I would have wanted to prepare something really special and a bit more elaborate but, alas, a storm raged all day and access to everything was limited. Worse, for a few hours this morning, the tap went dry. When water service resumed a little before noon, I cooked in a frenzy trying to finish as many dishes as I could. I … [Read more...]

Oatmeal de luxe: porridge with caramelized apples, honey and cinnamon

apples-oatmeal

Speedy's sick. He finds it hard to swallow solids so he's on a soft diet. Last night, it was plain congee; this morning, oatmeal. But not plain oatmeal. I was trying to tempt him to eat more so I did things to the oatmeal.Things? Yes, you know, I played with his food, to be honest. I cooked the oatmeal as usual but with a pinch of salt. When it was done, I stirred in two … [Read more...]

Granola bars with pineapple syrup

granola

On with the granola experiments. We've done three, so far, and this is the second. Both the second and third versions were baked with fruit syrup. What fruit syrup?Speedy's sister, Susan, works with Mama Sita. You might have seen her on TV -- she appears on Mama Sita ads. She did the radio ads too. She showed my blog to her boss and her boss sent a large bag of Mama Sita … [Read more...]
