i&#039;ve tried hot smoking several times and found that using old biscuit tins saves my wok from wear and tear. :)
use an old biscuit tin with a lid (poke 5 or 6 holes on the lid using a screwdriver) and a wire rack or a bit of chicken wire to fit the biscuit tin.

You can also add jasmine rice to the smoking mixture. This keeps the tea, sugar and flavorings smoking while the food grills. :)
