The first time I made tres leches, I baked cupcakes. Speedy and the girls loved it so much that they have been asking me to make tres leches cupcakes again. But I didn’t because the process of brushing the hot cupcakes with the three-milk mixture was such a messy affair. For those of you who ... (more)
My family never goes to U.P. Los Baños without dropping by DTRI (Dairy Training and Research Institute), buying milk and cheese and, often, having a picnic on the football field of the campus. When it was too hot or when there wasn’t much time, we’d park under our kapok tree and drink milk there as ... (more)
To complete the Mexican theme of yesterday’s brunch, I had a cup of cafe con leche with the potato, chorizo and chili dish. What is cafe con leche? The literal translation is coffee with milk but the name doesn’t do justice to this wonderful anytime-of-the-day drink. Just so I don’t get accused of being politically ... (more)
The coffee jelly, dessert version, was posted three and a half years ago. Here is the beverage version. It was a very hot day, what can I say? I wanted coffee but the thought of drinking something hot just didn’t appeal to me. Neither did the thought of all that sugar in the usual iced ... (more)
Mix torn bread with half-cooked bacon. Add beaten eggs, milk and grated cheddar cheese. Season lightly with salt, sugar and pepper. Top with cubes of cream cheese and butter. Bake. The result is a light and airy pudding, slightly sweet but not irritatingly so, that will have you hankering for second and third helpings. I ... (more)
If you’re not a reader of my other blog, let me explain that my firstborn is now in college and she stays in a rented condo during weekdays. Until she becomes more familiar with eateries in the area, I pack five sets of dinner for her every week that she can reheat in the microwave oven.
We drove her to her condo last night and one of the dishes she brought was this chicken and potatoes with creamy cheese sauce…
Is a smoothie the same as a slushy? No, it isn’t. According to Wikipedia, slush or slushy is “a generic term for a flavored frozen drink. In general, slush drinks are made by freezing a sugared liquid while constantly stirring it. The sugar and motion prevent the formation of large ice crystals, while the overrun process mixes in air, creating a smooth slush.” There are machines for making slushies.
Yesterday was an exceptionally hot and humid summer day. Just when all I could think of was spending the entire afternoon in the bath tub with a pitcher of cold drink beside me, Speedy came home with an ice chest full of shaved ice, two cartons of milk and two cans of sweet corn kernels. Cold, cold, COLD maiz con hielo on such a hot afternoon was nothing short of heavenly.
It may look like a margarita but it isn’t. Think maiz con hielo that can be drank from a glass. Technically, it’s a smoothie. But smoothies are made with fruits, and corn isn’t a fruit, so I couldn’t call it a corn smoothie. It isn’t a sorbet nor a granita either because it is drank rather than eaten with a spoon. Ergo, I decided it’s a slushie. Made by my daughter Sam. With canned corn kernels, milk, sugar and ice. We were withering in the afternoon heat and a cold, cold drink was a welcome respite.
(Yesterday’s column) I found it strange that officials of the Health Department started checking if babies confined in hospitals with kidney ailments could be victims of the contaminated Sanlu milk from China. Sanlu milk was not exported to the Philippines. The accompanying statement of health officials clarified the issue with the admission that Sanlu milk ... (more)
Milk is on the news again as the China milk crisis continues to unfold. A statement by the Chinese health ministry says that as early as August that manufacturer Sanlu Group was aware of the presence of melamine, a banned chemical, in the baby milk powder that has caused kidney stones in at least 32 ... In 2003, a time when I hadn't heard of the term "blog", I started a recipe website at cooking.houseonahill.net using a now defunct content management system that ran on ASP. Ok, never mind the geek talk, I'm sure you're not interested in that. The contents easily multiplied and, in 2004, I moved the food site to pinoycook.net. Always unhappy with the fact that the dot com … »»
