Something from Nigella Lawson’s book

chicken-lemon-tarragonLemon wedges, garlic and fresh herbs are added to chicken pieces in a baking dish and baked in a slow oven. The result? Good straight out of the oven. But reheated, the bitterness of the lemon’s pith becomes pronounced.

The frugal cook

fresh-norwegian-salmonIt’s convenient to buy frozen fish fillets but when there’s an opportunity to go to Farmer’s Market for good-quality fresh fish, I prefer to buy a whole slab and have it prepared according to my specifications. For instance, I chose the tail end of a salmon and had it weighed…

Great with hoisin sauce

onion-pancakesThe lazy way to make onion pancakes is to simply roll them flat. That’s what I did on my first attempt. Then, my pride and my self-respect took the better of me — surely I could do better than that. I did a second attempt, rolling and coiling and re-rolling them, and the result made me proud. Take a look.

Blackberry clafoutis

blackberry-clafoutisClafouti (or clafoutis) is a custard like cake of French origin traditionally made with cherries. I baked mine with blackberries, the texture was light at the center and wonderfully crusty around the edges, but there was one problem. I didn’t know that blackberries have small seeds which really proved to be irritating while eating the darn cake. Next time I make a clafouti, I’ll use blueberries or strawberries instead unless I manage to find fresh or frozen cherries.

An early Mother’s Day gift

I’ve told him a thousand times I want a new tripod. But Speedy wouldn’t budge. He says a tripod is a “business expense” so I should buy a new one myself. That — despite his oft repeated pronouncement that seeing my Canon EOS 40D with a super heavy lens mounted on my decrepit tripod makes ... (more)

So, how did you spend the Halloween weekend?

It was not an extraordinarily long weekend but it felt that way because Speedy was home on a Saturday. He never is unless it’s a holiday. Where he works, Saturday is a working day. I wish it weren’t so, it has so ruined our old habit of driving north or south of Metro Manila during ... (more)

I said it’s not a cake!

Speedy set the bread on the kitchen island then sat down two chairs away from me. I asked him if he wanted a mid-afternoon snack. “A sandwich?” I asked. “What kind?” he said.

“Meat loaf. Here,” and I pushed towards him the plate that you see in the photo.

“Oh,” he exclaimed, “I thought that was a cake for tonight’s dessert.”

The Sunday burrito story

Sunday. At the house on a hill, that means it’s the man of the house’s turn to cook. And my turn to play paparazzi. I turned on the lights (Speedy’s such a cheapo he actually cooks without turning on any lights. Duh!) and started taking photos. I was happy with the details I was getting, ... (more)
