Stir – fried Beef and Straw Mushrooms

Sorry about the lag. I’ve had a bad, bad cold for the past two days and I’ve been sleeping a lot. In fact, I slept practically the whole day yesterday. I’ve been ignoring my coffee and switched to salabat (ginger brew) instead. Good for itchy throat and clogged nose. When I was younger I thought it was just old wives’ tale. But, really, it does wonders.

Stir-fried Beef and Straw Mushrooms

Tons of e-mails after not being able to stay long online for the past two days. Thanks. And I don’t intend to stop posting here. If I do, that means I’m feeding my family with canned goods and hotdogs. :)

This beef and mushrooms recipe was Tuesday night’s dinner. Late posting, huh? Better late than never, I guess.

You might want to adjust the seasonings. My taste buds weren’t working properly when I cooked this. There were no complaints from my family though.

Ingredients :

350 g. of beef sirloin or tenderloin, sliced very, very thinly
1 tray of fresh straw mushrooms (or 1 can if fresh mushrooms are not available), cut in half lengthwise
1 carrot, julienned
1 bunch of onion leaves, cut into 1-1/2″ lengths
1 onion, halved and sliced thinly
1 tbsp. of finely minced garlic
1 tbsp. of light soy sauce
1/2 c. of water
1-1/2 tbsp. of oyster sauce
1/2 tsp. of sugar
1/2 tsp. of salt
1/4 tsp. of pepper
1 tsp. of cornstarch
1/2 tsp. of sesame seed oil
2 tbsp. of cooking oil

Cooking procedure :

Cut the beef into bite-sized pieces. Season with the light soy sauce.

Heat a heavy skillet or wok. Pour in the cooking oil and heat to smoking point. Stir-fry the beef slices for about 30 seconds. Add the carrot strips and mushrooms. Continue cooking for another 30 seconds. Mix together the water, cornstarch, oyster sauce, sugar, salt, pepper and sesame seed oil. Pour into the beef and vegetables, stirring to prevent lumps. Cook just until the sauce is thick and clear. Turn off the heat and add the onion leaves. Stir a few times. Serve at once.
