Slow, long cooking. For soups like sinigang, cuts with bones are best.

A lot of Filipino dishes consist of pieces of meat cooked in some broth or some sauce. Unfortunately, whenever I cook, the meat turns out tough. How can I get the meat to be very tender? I am wondering if I am choosing the wrong cuts of meat or if I am not cooking the meat long enough.

this is discouraging me from cooking Filipino food, which i really miss. I would really appreciate your help.

Carla, that's hard to do -- I don't know how open-minded they are about new food experiences, what their attitude is about fish heads or pork intestines... It's you that know them, so, you're in the best position to make that decision.
