Shoppersville’s banana cream pie

banana cream pie

Shoppersville, along Katipunan Road in Quezon City, has a bakeshop on the second storey that sells the most wonderful cakes. Note that these are not commercial-looking cakes that are so perfectly crafted that not an inch looks misplaced. Shoppersville’s cakes in fact look home-made–imperfect symmetry and all. But they are just wonderful. The chocolate cake is a personal favorite and, among the pastries, the mamon (chiffon cupcake) stands out.

My husband came home one day last week with this banana cream pie in the photo. Crust, custard, banana slices and meringue. My daughter Sam and I used to make a much simpler version of banana cream pie, something I learned in high school. Ordinary flour crust, custard, banana slices and meringue, baked until the peaks of the meringue are lightly browned. But the crust of Shoppersville’s banana cream pie is something I swear I will try to replicate soon. It was the best part of the pie. Best guess–it was made with a mixture of flour, butter, brown sugar and nuts. Delicious!
