My kids absolutely loved this one.

It looks pretty enough for a dressy dinner but don’t be fooled by its appearance. It’s so easy to make. No special cooking skills necessary to make this wonderful roast pork with mushroom sauce. If you can slice and stir, you can do this one.
Ingredients :
cooked and cooled roasted pork (please refer to the previous recipe)
3/4 c. of canned straw mushrooms, drained and water reserved
1/4 c. of butter
3 tbsps. of flour
meat broth
salt and pepper
Cooking procedure :
Arrange the sliced roast pork on a platter.
Coarsely chop the mushrooms.
Melt the butter in a cooking pan. Add the flour all at once, stirring to dissolve. Cook until golden, about 5-7 minutes.
Add enough meat broth to the mushroom water to measure about two cups. Pour into the flour mixture, a little at a time, stirring to blend well. Off the heat, season with salt and pepper.
Pour the sauce over the pork slices. Top with the chopped mushrooms.

I just tried this for lunch but had to substitute margarine (daricreme) for butter, still it tasted great! I also had to use my oven toaster to roast the pork.. and it still turned out nicely.
Thanks! I’ll will now add this to my regular menu at home!
