Oatmeal cookies and a cookie fest

This morning, we were at the kids’ school for the annual Family Day. Unlike last year when most of the activities centered around games, the highlight of this year’s affair was a program and a cookie fest. So, I spent the greater part of yesterday afternoon baking our contribution to the cookie fest. I made oatmeal cookies from a recipe given by my sister-in-law, Susan, years ago. To make them more attractive, I added candies — Nips, to be more precise. M&M’s would be too expensive. You may also use chocolate morsels so you’d have chocolate chip oatmeal cookies.

The kids were required to bring 20 cookies each. The recipe was supposed to yield 4-1/2 dozens but I was only able to make 30 pieces. And they were small cookies — about two inches in diameter. I don’t know how I could have stretched the cookie mix to make 4-1/2 dozens. But they turned out great, anyway. :)

This recipe will yield about 30 2-inch oatmeal cookies. Oh, and I strongly recommend an electric mixer unless you really prefer to exercise your arm muscles. :razz:

Ingredients :

1-1/4 c. of butter or margarine
3/4 c. firmly-packed brown sugar
1/2 c. granulated sugar
1 egg
1 tsp. vanilla extract
1-1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon powder
1 tsp. nutmeg powder
3 c. instant oats
1-1/2 c. of chocolate candies (Nips, M&M’s or even chocolate morsels)

Baking procedure:

Preheat the oven to 170oC.

Stir together the flour, baking soda, salt, cinnamon and nutmeg.

Beat the butter or margarine, brown sugar and granulated sugar together until light and fluffy. Add the egg and vanilla extract and continue beating until well incorporated. Add the flour mixture and mix until well blended. Stir in the oats. Lastly, stir in the chocolate candies.

Take a tablespoonful of the mixture and use another spoon to push it onto an ungreased cookie sheet (I lined the cookie sheets with baking paper so I won’t have to wash them hehehe). Bake for 10 minutes. Cool and store in airtight containers.

Those are my oatmeal cookies in the two containers on the lower right side of the photo above. I didn’t bring a camera thinking there would be nothing interesting to photograph. My mistake. Thanks to my daughter Sam for lending me her Olympus Mju 410. Below are more photos from the cookie fest.

    Yah, most were store-bought. You won’t believe it but 50% of the cookies there were either Chips Ahoy or Keeblers.

    noemi, perhaps that’s because they like them crisp? i like mine chewy. :)

    fawn. they’re chewy. another minute in the oven and they would be crisp.

    Baking biscuits for your kids to take to school is a humbling feeling.Your kids must be very proud of their mum who cares a lot.
    I’ve got a nearly 4 years old girl and she loves mucking around with me in kitchen.Sometimes she tells me what she wanted me to bake and the two of us having a good time in kitchen.my daughter would licked the spoons afterwards and says taste good mummy.
    I bet your girls loves mucking around with you in the kitchen as well!

    Oh yes, they do Gena. And they’re getting pretty good at creating dishes themselves. I’ve even created a separate category on this blog for their creations. :)

    And the spoon licking that your daughter does… oh yes they do that. When they were a little younger, they would even fight over the bowl where the brownie had been mixed. :razz:
