Macaroni soup

If you want a hearty soup to go with your fried or grilled fish or meat, try this easy macaroni soup cooked with browned bits of ground pork, carrots and lots of chopped onion leaves. My husband, who grew up with the idea that no lunch or dinner is complete without soup, was perfectly happy with this easy soup dish.

Ingredients :

150 g. of ground lean pork
100 g. of uncooked elbow macaroni
1 onion, chopped
1 carrot, chopped or cut into 1/4″ x 1/4″ cubes
4 c. of meat broth
2 tbsp. of butter
2 c. of full cream milk
1/8 c. of finely chopped onion leaves (sibuyas na mura)
salt and pepper

Cooking procedure :

Melt the butter in a large saucepan or casserole. Heat until frothy. Add the ground pork and cook over medium-high heat until the meat starts to brown. Add the chopped onion and carrot. Continue cooking until the onion is soft. Pour in the meat broth. Season with salt and pepper. Bring to a rolling boil. Add the macaroni. Cook, stirring, until the broth boils again. Cover and simmer for 10-15 minutes or until the macaroni is done. Pour in the milk. Adjust the seasonings. Cook just until the milk is heated through. Transfer to a soup tureen or bowl. Sprinkle the chopped onion leaves on top just before serving.

    hi connie.. masarap sya even my 14mos. old daughter na pihikan sa pagkain sobra at anything na may gatas ayaw pero this soup takaw nya hahaha… tnx i will surely make it again..

    one week palang since I started baking..then i found your site. It really made me interested to learn more especially I have two kids. Parang marasap po yung macaroni soup nyo. How about po yung meat broth? Pwede ba I’ll use knorr broth cubes?

    hi connie, what i usually use instead of ground pork is ground chicken as in “sopas” style. over here in the u.s. we want short and easy recipes because we’re always on the go. and your recipe with ground pork is a good idea. i never thought of that. i will surely try it…thanks!
