Once you molded the polvorons, refrigerate for at least two hours. Better if you can keep it in the fridge for a day. I usually put the molded polvorons in a plastic container layer by layer, lined with plastic sheets or cut rite in between layers. Don&#039;t forget to tightly cover the plastic container to avoid polvorons from absorbing other food odors inside the fridge. When I start coating them, I just get a max of 15 pieces of cold polvorons from the fridge so that it won&#039;t defrost or thaw. Melted chocolate adheres better on cold polvorons.</description>
