Tequila porkloin

Now, this is a first — the first submission inspired by something that my husband cooked. The dish? Tequila Pork Loin. The contributor — Emy Medina. Here’s her message:

At 58 I’m probably your oldest fan. I’m married with 3 grown-up children who are all on their own and a proud grandma of an adorable 6 mos. old boy. I’m still employed as a critical care nurse. Raising 3 children with different food preferences was quite a challenging job—whew—I don’t know how I made it but I survived.

I really enjoy your website, not only because of the recipes but the funny stories about your family and pets, fantastic photos and some interesting discussions about just “everything” in general. I get other peoples’ perspective on how they view the world specially the younger generation. Isn’t it strange that I connect with other people by way of cooking?

Tequila porkloin

Last Sunday our Ina turned 90. My sister was in-charge of the food but I made something different and special. I cooked Speedy’s Tequila Porkloin. Instead of apricot jam I used my homemade orange marmalade. It was a success!!!! Luckily, my niece was able to take some photos before it’s all gone. I snipped rosemary from a newly bought gallon container plant that will find a new home in my small garden and used it as garnishing.

Thank you, Emy. And I know what you mean by connecting with people through cooking. I really have to show this to Speedy. He is sooo going to be tickled pink. I hope it encourages him to cook more real food and feed us less Spam and hotdogs on Sundays.
