Chicken and potatoes in lemon-cream sauce

I cooked this chicken dish a couple of weeks ago. I had no intention of posting the recipe because I was saving it for the cookbook that I am writing. Oh, there, I announced it already. Anyway, the cookbook will contain unpublished recipes. My original plan was to include only original recipes, meaning, ones that I “invented”, in panic mode or otherwise. But I decided to stick with an all-Filipino theme. That said, this recipe will not be included in the cookbook since it’s hardly Filipino. As to when the cookbook will be published, I am hoping that will be before the end of the year.

This chicken dish is similar to my earlier chicken, peas and mushrooms in sour cream. Instead of using commercial sour cream for the sauce, however, I used all-purpose cream to which I added the juice of one lemon. Ah, the flavor and the aroma was much, much better.

Ingredients :

350 g. of boneless chicken thighs
150 g. of potatoes
1 large white onion
1/4 c. of butter
1 c. of all-purpose cream
juice of 1 lemon
1/2 tsp. of grated lemon zest
1 c. of chicken broth (tips for making homemade broth)
salt
white pepper
a small bunch of fresh dill

Cooking procedure :

Peel the potatoes and cut into wedges.

Cut each chicken thigh into 4 portions. Place in a bowl and season lightly with salt and white pepper.

Peel and thinly slice the onion.

Pour the cream into a bowl and pour the lemon juice into it without stirring.

Melt the butter in a wide cooking pan. When frothy, add the potato wedges and cook until the edges start to brown. Add the chicken pieces and cook, stirring, for about 2 minutes. Add the sliced onion and stir. Season with salt and pepper. Pour in the chicken broth and bring to a boil. Turn down the heat to low, cover and simmer for 20 minutes.

When the potatoes and chicken are done, pour in the lemon-cream mixture and add the lemon zest and fresh dill to the cooking pan. Stir. Add more salt if necessary. Simmer, uncovered, for about 10 minutes, stirring occasionally. Let stand for about 10 minutes before serving to allow the sauce to thicken a bit (it thickens as it cools) and the flavors to infuse.

    Pinky, it’s called whipping cream (heavy or light) here in North America. I remember when I first tried making fruit salad here and I couldn’t find “all purpose cream” in the dairy section. Whipping cream lang pala yun. ;-)

Do check it out when you go off on one of your trips.

    it’s an herb, cynee. you can buy it in the salad vegetable section of most supermarkets. or you can go to market! market! and buy a live plant for PhP 35.00 and just put in where it gets a lot of sun. Voila, you have fresh dill everytime you need it.

    Wow a cookbook. I will buy! Did you consider asking Anvil Publishing to publish your cookbook. I just launched together with some other mothers a book on Loss of a child. Anvil was quite supportive and we had a successful launch just early this month. I am 100% sure your book will be a success.. I will be there at your book launch. baka you can come up with a cooking demo pa as bonus :)

    and by the way, what do you mean by “a head of garlic” or “a head of onion”? is it similar to “a clove of garlic”?

    Pinky, here in the US, we use heavy cream. You can by it in any grocery store, so I am sure there’s one there in Vancouver. My favorite brands of heavy creams are from Nestle and Lucerne, because they’re rich and creamy.
