Recipes for ice cream and sorbet

In this section, recipes for homemade ice cream (like this) and sorbet (such as this), as well as concoctions made with store bought ice cream (like this).

What is a sorbet? Think of it as ice cream but with neither milk nor cream. Like a low-fat version of ice cream. But to call it frozen sweet drink would be misleading. A properly made sorbet scoops like ice cream. It is smooth and evenly textured with no large ice crystals.

Applesauce and walnut ice cream

Diverting from the basic recipe for the ice cream custard base of egg yolks, sugar, cream and whole milk, I replaced the sugar and part of the whole milk with sweetened condensed milk. The result was absolutely delightful — the ice cream tasted like leche flan (custard or cream caramel).
