Recipes for egg dishes

At home, we love eggs. We really, really do.

Eggs are high in cholesterol? As early as 2001, there has already been a study that the egg phospholipid, or lecithin, naturally negates absorption of cholesterol. The finding was the result of a study in Kansas State University by researchers Sung I. Koo, Yonghzhi Jiang and Sang K. Noh published in “Egg phosphatidylcholine decreases the lymphatic absorption of cholesterol in rats” which appeared in the Journal of Nutrition.

Eggs are rich in protein. If you don’t have abnormally high cholesterol levels, a family history of cardiovascular disease, type 2 diabetes or allergy, the study says it is okay to eat one to two eggs per day. If we have to do the math, we’ll realize that eggs are actually an inexpensive source of protein since the protein content is higher than those found in meat, milk or fish.

So, go ahead and have an egg today. Or two.

Deviled eggs for Easter Sunday brunch

deviled-eggs

Easter Sunday is exactly seven days away. My family does not celebrate Easter but we love egg dishes any time of the year. And the egg hunt, a Western tradition that did not became popular in this country until the last two decades, is not something I grew up with. And why is the egg associated ... (more)

Spinach, bacon and cream cheese pot pie

spinach-bacon-cheese-pot-pie2

If we’re going to be precise, this is a quiche and not a pot pie. The filling is really an omelet mixture — eggs, milk and cream cheese with spinach, bacon and onion — so, it’s technically a quiche. Except that a quiche is nestled in a crust rather than covered on top by a ... (more)

Scotch eggs: dinner for two plus midnight snack

scotch-eggs

Defined as shelled hard-boiled eggs covered in sausage meat, dredged in bread crumbs and deep fried, Scotch eggs are usually served cold but Speedy and I prefer them hot — with a gravy of melted cheese. Okay, make that cheat-gravy — I just microwaved half a cup of pimiento-flavored Cheez Whiz and spooned it over ... (more)

The best brunch ever: scrambled eggs, pancetta and sausages

There wasn’t a lot of cooking that went on in the house today as we were too busy trying to figure out if I was pregnant or not. Turns out, I’m not. Am I relieved or disappointed? Neither. No strong emotions either way. Probably, at the back of my mind, I knew I couldn’t be ... (more)

Mushroom omelet with English muffins

e

The great thing about omelets is that you can serve the bread on the side or you can split the bread, use the omelet as a filling and you have a meal on-the-go. This omelet has sliced brown Swiss mushrooms, chopped tomatoes and onions and minced garlic. And for a soft and creamy texture, I ... (more)

A la Rakott Krumpli (Hungarian Potato Casserole)

rakott-krumpli

This is Speedy’s second attempt at making this very popular Hungarian dish. The first time, he did it the traditional way with sliced potatoes and sausages. The potatoes didn’t cook very well, the sausages weren’t salty enough so the dish turned out rather bland. This time, he made some modifications. The potatoes were grated instead ... (more)

Rolled bacon and cream cheese omelet

One night earlier this week, way after midnight, my brain cells still too hyped up after viewing some gorgeous architectural designs, I was scanning the channels for anything that was boring enough to dull my senses and extinguish my brain activities for the night. Instead, I landed on the Surreal Gourmet show, got glued, noted ... (more)

Congee is rice porridge is arroz caldo

Last Thursday, Speedy and I were at the market. There was one stall selling premature chicken eggs (if we had left the house earlier, there would have been more stalls selling them but these things sell like hot cakes and I was lucky to still find some in that one stall) and I grabbed half ... Bread cups and scrambled eggs

Few days’ old bread and scrap meat became this fabulous brunch. We spent the long weekend in Tagaytay, had to bring home a whole loaf of multi-grain bread that we were unable to consume and I was thinking what to do with it yesterday. Fortunately for me, in the house where we stayed, there was ... (more)

Have you ever cooked eggs in coffee?

coffee-eggs3

I have a daughter, Sam, who, except during summer and Christmas breaks, is home only on weekends. She’s in college and stays in a rented condo near the university. Her father, Speedy, picks her up every Friday night and drives her back on Sunday evening. One Friday, Speedy went to see a client before picking ... (more)
