The noodles are tossed with a mixture inspired by satay peanut sauce then topped with a simple stir fried dish. For added depth of flavor and texture, the dish is garnished with crisp fried onion, toasted garlic bits and sesame seeds.

Egg noodles, rice noodles and buckwheat noodles will all work for this dish. I’m not sure about pasta though.

There is really no rule as to what stir fry you can top the noodles with. You can use any kind of meat or, if seafood is more your thing, then go with seafood. Prawns and shucked clams or mussels should be good. The vegetables can be whatever combination you prefer.

Recipe: Asian-style noodles with spicy peanut sauce


  • about 100 g. of noodles, cooked according to package directions
  • 3 tbsps. of cooking oil
  • 3 chicken thigh fillets, cut into thin strips
  • 1 carrot, julienned (i.e., cut into matchsticks)
  • about 12 green beans (ends snapped off and sides stringed), sliced thinly on the bias
  • 1 onion, thinly sliced
  • 1 tbsp. of minced garlic
  • patis (fish sauce), to taste
  • black pepper, to taste

For the spicy peanut sauce:

  • 4 tbsps. of smooth peanut butter (I used sweetened)
  • 2 tbsps. of hoisin sauce
  • 1 to 2 tbsp. of sambal oelek, depending on how spicy you want the sauce
  • 1/4 tsp. of grated garlic
  • 1/4 tsp. of grated ginger
  • juice of 2 to 3 kalamansi (or juice of about a quarter of a lemon)
  • patis (fish sauce), to taste
  • a drizzle of sesame seed oil

To garnish:


  1. While the noodles cook, make the spicy peanut sauce. Place the peanut butter in a small bowl and pour in 3 to 4 tbsps. of boiling water. Mix to form a smooth paste. Add the rest of the ingredients and stir to blend.

  3. As with any stir fry, it is best to prepare all the ingredients before you start cooking.

  5. Heat the cooking oil. Add the chicken and stir fry just until the meat changes color. Pour in a splash of fish sauce. Season with pepper. Continue cooking until the liquid has been absorbed by the meat and the meat pieces start to brown along the edges.
  6. Add the garlic and onion. Stir fry for half a minute.
  7. Add the green beans and carrot. Season with more fish sauce and pepper. Stir fry for one to two minutes.

  9. Toss together the noodles and the spicy peanut sauce.
  10. Divide the noodles among individual plates.

  12. Top the noodles with the stir fried chicken and vegetables.
  13. Garnish with sesame seeds, crisp onion slices and toasted garlic bits.
